Aus den Wurzeln der Cichorie wurde ein kostengünstiger Kaffeeersatzstoff gewonnen, der für die ärmeren Bevölkerungsgruppen gedacht war, die sich keinen echten Kaffee leisten konnten. 1859 waren dort neun Frauen und fünf Männer, im Jahre 1891 bereits 99 Beschäftigte angestellt, darunter 33 Frauen. Sie wurden vor allem in der Verpackung und als Cichorientrocknerinnen eingesetzt.
